Pastmatic is the technology which provides pasteurization,\u00a0cooling and ageing process in one machine only taking up\u00a0very little space.\u00a02 models available: Pastmatic 60 to pasteurize up to 60lt\u00a0of mixture and Pastmatic 2×60 equipped with 2 independent\u00a0elliptical tanks for the production up to 120lt of gelato base. The elliptical\u00a0tank – if compared to\u00a0other shapes- offers the\u00a0advantage to make the\u00a0mixture smoothly run\u00a0along its walls (without\u00a0beating) granting no\u00a0standstill during stirring\u00a0process and avoiding\u00a0lumps making. It allows moreover to reduce spaces but to keep the same capacity of a\u00a0roundshaped\u00a0tank.<\/p>\n
Designed for a careful heating management which is\u00a0essential for keeping the organoleptic properties, the quality\u00a0and the taste of food without alteration. The heating system\u00a0radiates heat and makes mixture absorb it in a smooth and\u00a0not aggressive way. Etched foil heating elements ensure no\u00a0thermal inertia -which, instead, occurs in bain-marie heating\u00a0systems- and avoid the most delicate ingredients to burn.<\/p>\n
Tank is equipped with a smart and quick cooling system on\u00a0both its bottom -side which keeps longer in contact with the\u00a0mixture- and its side walls to avoid the \u201cigloo\u201d effect. \u201cIgloo\u201d\u00a0effect occurs when some moisture coming from the external\u00a0environment gathers on the walls of the tank, turns into ice and then melts affecting the quality\u00a0of the mixture. Pastmatic ensures a gentle and high quality cooling of the mixture even for low\u00a0quantity of product.\u00a0The new evaporator for the cooling process grants the same performance halving however the\u00a0power installed.<\/p>\n
Also the new stirrer is covered by a patent: the device has now increased\u00a0of a 20% mixing and aspiration perfomances. Stirrer works as a real\u00a0pump thought which the mixture is sucked in and then strongly rubbed\u00a0on the bottom of the tank to turn solids in liquids thanks to an effective\u00a0heat exchange getting a smooth and homegeneous base. Stirrer can\u00a0be removed from the top to prevent unhygienic and difficult-to-clean\u00a0deposits on the bottom of the tank.<\/p>\n
